Hoshigaki is a healthy traditional Japanese snack which is made by drying astringent persimmons in fall. The persimmons are peeled and hanged outside to dry out. After about a week they start to darken and when that happens they need to be massaged gently every other day so the pulp inside can break down. After three weeks they should be ready.
